Lomo Saltado is likely the most popular of all Peruvian dishes. The dish originated as part of the 'chifa' tradition, the Chinese cuisine of Peru. It differs from traditional Chinese cuisine in its inclusion of potatoes and tomatoes, two ingredients never used in Chinese cuisine. The dish is normally prepared by marinating sirloin strips in vinegar, soy sauce, aji panca, and other spices. Followed by stir frying these with red onions, cilantro, tomatoes, and potatoes.
